recipe: summer side

Welcome: the fresh, cheap and healthy summer side salad. One that won't go bad in the midst of the heat, or break the bank. Chickpea, feta and parsley salad.

  • 1 medium onion, diced
  • 3 gloves of garlic
  • 1 1/2 tbsp olive oil
  • pinch of red chili flakes
  • 2 14oz tins of chickpeas (garbanzo beans)
  • 4 chopped scallions
  • 1 cup chopped parsley
  • juice of 1 lemon
  • 5 oz feta cheese

  1. Heat 1 tbsp of olive oil and cook the red onion until lightly golden, add garlic and chili and cook until garlic is fragrant. Set aside to cool.
  2. Drain the chickpeas, rinse and place in salad bowl. Add crumbled feta, onion, parlsey and lemon juice, season with salt and pepper. Add the cooled onion and garlic mixture and remaining oil and mix well.
