recipe: baked beet chips

onwards with the new year resolutions of better eating comes a healthier and equally satisfying snack, instead of potatoes... baked beets! and they're totally comparable to chips, minus empty kcals. p.s. I'm feeling extra healthy today because I just completed my 1st half marathon !! :) :)

  • 4 medium beets
  • 2 tsp extra-virgin olive oil
  • sea salt
  1. pre-heat oven to 350 degrees. peel beats and slice 1/16 inch thick with a mandoline. in a large bowl, toss beats with extra virgin olive oil.
  2. on two rimmed baking sheets, place beets in a single layer and sprinkle with a small amount of sea salt.
  3. stack another rimmed baking sheet on top of each and bake until beet edges begin to dry out - about 20 minutes. uncover and rotate sheets, bake another 10 to 20 minutes, removing chips as they becoming lightened in color.
